3 medium carrots, grated
1x 400g tin of chickpeas, drained
1 medium egg
salt & pepper, to taste
2 tbsp dried mixed herbs
100g breadcrumbs or porridge oats
Your choice of extras to serve: burger buns, sliced tomatoes, sliced avocados, lettuce, mayonnaise or hummus or pesto, pickles, sliced cheese, or your own favourites

What kid doesn’t love burgers? These carrot & chickpea burgers have a sweet and yummy twist – they are veg-filled and really delicious. The real joy of this recipe comes from the kids getting their hands dirty and shaping the patties.
Method:
Mix carrots, chickpeas, egg, salt & pepper, dried mixed herbs and breadcrumbs or oats in a food processor to form a smooth, thick paste. Form into 8 patties and fry in a drizzle of olive oil in a pan set over medium heat until cooked through and golden (about 3-4 mins on each side). Serve with your choice of bun, fillings and extras. To make it extra fun for the kids, choose a selection of favourite burger fillings you are happy for them to eat and lay them out in bowls and plates on the table to make it a “build-your-own” burger dinner. They are more likely to eat the veg they choose to put in it themselves!

Roasting carrots is really simple and brings out the sweetness, making it one of the easiest ways to get kids to enjoy it! Sealing the carrots in the foil helps them cook quicker to save time.
Method:
Preheat your oven to 200C/180C fan/gas 6. Cut carrots diagonally, changing direction at each cut, so each small chunk is angled and shaped a little like a triangle. Toss in a drizzle of olive oil and spread on a baking tray. Sprinkle with a pinch of salt and cover the tray with foil, scrunching it around the sides so the carrots are sealed in. Roast in the preheated oven for about 25-35 mins, or until the carrots are soft and starting to catch slightly and caramelise. Serve hot or cold on their own, topped with crumbled cheese, chopped nuts or pesto, or as a side.
You can change things up by sprinkling over some dried herbs like fennel seeds, dried mixed herbs, oregano or basil before roasting, adding spices like ground cumin, coriander and/or paprika, or adding a generous handful of roughly chopped fresh parsley or coriander at the end of cooking time.
Grated Carrot Salad with Easy Jar Dressing
Serves: 4-6
Prep time: 5 mins
Ingredients:
For the dressing:
1 tsp of Dijon mustard
2 tbsp red wine or apple cider vinegar
8 tbsp extra virgin olive oil
For the salad:
4 large carrots
fresh herbs of choice (parsley, coriander, basil, mint or chives all work really well)

This recipe is barely a recipe it is so easy. A popular starter for French families, this grated carrot salad is an easy affordable snack, starter or side. The next time you hear the “Muuuuuuum, I’m hungry” whinge, have a go at serving this up to fill their bellies with veg.
Method:
To make the dressing, add mustard to a lidded jar. Pour in the vinegar and olive oil. Season with a little salt & pepper and screw the lid on tightly, then shake the jar until the dressing is combined. Coarsely grate the carrots and mix with the dressing and a handful of roughly chopped fresh herbs. Serve as is or add a handful of pumpkin seeds.
You can change things up by replacing one of the carrots with grated raw beetroot, celeriac or even apple. Use pesto instead of dressing and skip the herbs for a different flavour. Serve as a starter to the kids to fill them up with veg first.
